All of the messages incoming to the domain associated to this account now have that icon, and also mention the policy name in the little message area above the message body, just above the Subject line of an email.

I've almost answered my own question as have you, but I guess I thought I was enabling a policy that would protect emails outgoing to external recipients from my organization, but instead it somehow seems to be enabled on all email coming INTO the organization, and has no effect on emails I send.
